How to Up your Plant-Based Foods

Creating quick nutritious snacks is one of our specialties especially with growing families and busy lives, we’ve got it down to an art-form. Being able to think on your feet and create simple yet filling foods for ourselves, family and friends is a great skill!

So here’s one of our favourites and you’ll see why!

Fruit salad! Yep! but not the way your expecting, we like to do things differently!

Unlike the fruit salads we made at school when we were young, this has been jazzed and pizzazed up with carrots, red peppers and seasonal fruits like cherries, strawberries, pomegranates! Yep, I said red peppers and carrots! But we’re not going to stop there, oh no no no! We’re also adding beetroot, mint and flat leaf parsley for extra added flavour! Guess what? Not even the your fussy-eaters will notice! We know we’ve done it many times before! Our fruit salads are very versatile, taste great and increase your plant-based foods without feeling prescriptive!

A versatile fruit salad like this in an air tight container stored in the fridge can usually last 4-5 days, depending on use!

With our versatile fruit salad, you now have your base ingredient for: Snacks, smoothies, breakfast and lunch.

That’s right. Take one cup of fruit salad to one cup of water or rice milk place in the blender and voila you have yourself a satisfyingly, mouth-watering smoothie you can even add a 1 tablespoon of peanut or Tahini to make it Oh-so-mega-3-6 deliciously good!

As a breakfast bowl, have your salad with Greek yoghurt drizzled with honey! Then scramble your eggs, butter some toast and you’re set for the day ahead.

For dessert, we make a gorgeous caramelized crunchy oat topping. Add a knob of butter, teaspoon of brown sugar, 1 generous table spoon of Golden syrup into a saucepan. Melt together in a saucepan add tsp vanilla extract. Now add 1 cup of oats, 1/4 cup crushed pumpkin seed and sunflower a dash of mixed spice!  Mix thoroughly leave on a tray to cool. When cooled break up place in a container. Hands-off no munching! In our homes this does not last long! Really!

Our final idea, only because I can hear you dribbling. Take a recycled jar place fruit salad at the bottom add Greek yoghurt top with crunchy oaty gorgeous topping in the middle and ta-dah you’ve got yourself a great brekky, lunch or dessert, what more could you ask for.
